Michelin includes Cashel Palace in list of stunning wine cellars

 

Cashel Palace, the luxury County Tipperary hotel, has once again drawn the admiration of Michelin which has included its wine cellar in a new list of the world’s best.

 

Earlier this year, Cashel Palace Hotel’s fine dining restaurant, the Bishop’s Buttery, received a Michelin star for its excellent cuisine just two years after opening. The restaurant offers contemporary Irish cuisine with much of the produce sourced from farmers, growers and artisanal food producers in County Tipperary.

Executive Chef Stephen Hayes champions Ireland’s rich larder combining classical roots and contemporary flair to create seasonal dishes that are matched by an outstanding wine list.

The quality of the wine list and the intimate surroundings of the Bishop’s Buttery has also secured the wine cellar restaurant a place on a recently published list of 11 Stunning Wine Cellars at MICHELIN Restaurants and Hotels.

Among the attractions of the Bishop’s Buttery, the Michelin author highlighted the “weathered brick walls under vaulted ceilings and an open fire centerpiece” together with “stone floors, wooden storage racks above half vaults storing candles, and old-world wine boxes”. These recall the room’s days as Cashel Palace’s original kitchen.

The cellar has around 2,500 bottles including standout labels such as Francois Raveneau in Chablis, Domaine Leflaive Puligny Montrachet, Arnoux Lachaux Clos de Vougeot, Ornellaia in Tuscany, and Torres Mas la Plana in Penedes. Vintage Bordeaux wines include Chateau Cheval Blanc dating as far back as 1939.

For something truly memorable, the Chef’s Table provides a private dining experience in the cellar. Each course of the surprise menu is introduced by the chef in charge of producing the dish. This is accompanied by an in-depth description of each matching wine by the sommelier, and at the end of the meal the whole kitchen team serve the petit fours.

The Bishop’s Buttery is just part of the exceptional offering at five-star Cashel Palace, a sumptuously decorated hotel with a superb spa. The eighteenth-century Palladian manor was originally the archbishop’s palace and sits at the foot of one the most famous sites in Irish medieval history, the Rock of Cashel in Ireland’s Ancient East.

The Rock features the most impressive cluster of medieval buildings in Ireland including a round tower, a high cross, a Romanesque chapel, a Gothic cathedral, an abbey, the Hall of the Vicars Choral and a fifteenth-century tower house.

Some of the bedrooms in Castle Palace Hotel have balcony views of the historic site and there is a private pathway from the hotel to the Rock.
